Healthy Vegan Falafel

These healthy Vegan Falafel only take 10 minutes to prepare!


2 x 400g can chickpeas, drained and rinsed

2Tbs psyllium husks /ground flax seeds

1 cup fresh parsley, chopped

1 carrot, grated

1 onion, diced

6 garlic cloves, mashed

4Tbs chickpea flour / any other type of flour

1tsp paprika

½ tsp ground cumin

Salt and pepper, to taste

2Tbs tahini paste

3-4Tbs Olive Oil (for frying)



Blend chickpeas in food processor to a fine paste

In a bowl blend the chickpea paste plus all the other ingredients except the oil

Make the patties: 1Tbs/patty

Heat the oil in a non-stick frying pan

Fry the patties 2 min/side

Put the falafels on a plate covered with a paper towel, in order to absorb all excess oil

Serve! And enjoy!
